Gorgonzola Dolce
Gorgonzola dolce, which translates to “sweet Gorgonzola,” is the most mild and approachable variety of Italy’s most iconic cow’s milk blue cheese. This Gorgonzola is produced by the Leonardi family in the town of Cameri in the hilly Italian region of Piemonte, and has a gentle, slightly sweet, and milky flavor with just a hint of tang. The texture is ultra-creamy, almost spreadable, with delicate blue veining that lends a subtle earthiness without overpowering the palate. It pairs very well with honey; serve it on a cheese board alongside pears, figs, and walnuts. It also adds complexity to risotto and pasta dishes.
