Fresh cheese is made from milk that has not been aged or fermented. Examples of fresh cheese include ricotta, burrata and cheese curds. These types of cheeses are typically soft, moist, and have a mild flavor.

Soft cheese has a high moisture content and a spreadable or crumbly texture. Examples of soft cheese include brie, camembert  and feta.

Semi-soft cheeses are generally high in moisture content and, depending on their age, range from very mild in flavor to very pungent.  Examples of semi-soft cheeses include Monterey Jack, Edam, and Havarti.

Semi-hard cheeses usually become crumblier and more pungent as they age, but while young they are firm and flavorful. Think Cheddar, Gouda & Comte.

Hard cheeses pretty much have it all. They are dense, savory with complex flavor, and tend to have a granular, crystalline texture. Popular firm cheeses are Parmesan, Asiago and Mimolette.

Blue cheese is a type of cheese that is made by introducing specific types of mold, such as Penicillium roqueforti into the cheese during the production process. Some examples of blue cheese include Roquefort, Gorgonzola, and Stilton.
