Formai de Mut is a hard, raw cow milk Alpine cheese from Lombardy, made with rich whole milk from pasture-fed cows.
The flavour starts out sweet and savoury, then deepens into something more complex and gently spicy. You’ll find notes of cooked vegetables, ripe fruit, and a surprising touch of pineapple and peach, which give it a lovely brightness beneath its deeper, nutty character.
