Handeck (cow)

This is a 2-year old hand crafted washed rind cow's milk cheese that is produced using the same methods as a typical Swiss mountain style cheese.  It is delicately aged on cedar wood planks adding robust flavors to the cheese. It is a drier hard cheese with very rich and complex flavors and nutty overtones.
